Thymed Mushroom and Onion Saute

 

Sometimes I forget just how easy and gratyfing a simple saute is.

Whether a vegetarian or meat eater, this dish is quite satisfying because of the sweet onion flavor and texture of the mushrooms.


cleaned ,sliced, white whole mushrooms, and baby bella’s

1 medium red onion

1 handful of fresh thyme (remove half of the leaves from stem)

salt

pepper

EVO

butter

Red onion sliced and added to pan once hot. Use a mixture of EVO and butter. Caramelizing the onions is the key to the melding of flavors.

Once translucent, add your mushrooms and leaves of your thyme.

Saute on med to low heat. The liquid from the mushrooms will fill the pan. Add the remaining thyme stems with leaves still attached. Once the liquid reduces you’ll be left with a beautifully caramelized saute!

I paired my saute with a simple spiced jasmine rice.

I absolutely love the versatility of this saute. I’ve used it in omlettes, on salads and in sandwiches beleive it or not!!!!
