Single Serve Southwest Omelette
Cast Iron Pan Summer Series
All too often I find myself prepping an omelette and searching for things in my fridge that will spruce it up. One rule of the kitchen in my household, ”use what you’ve got first,” so here goes.
B’s Single Serve 5.5 in Cast Iron Southwest Omelette
INGREDIENTS:
2 eggs
1 tsp of milk or whipped cream or water
1/8 tsp of salt
1/8 tsp smoked paprika
1/8 tsp garlic powder
1/4 tsp black pepper
1/4 tsp coriander
2 tsp of salsa mild or hot, whichever your preference
grated cheese, your preference
1Tbsp butter
DIRECTIONS:
Mix all ingredients except butter in a bowl.
While the oven is preheating to 375, place your cast iron pan in the oven.
Once oven reaches desired temp, add butter to hot pan and allow to melt in oven.
Once fully melted, add your egg mixture.
The egg will literally swell and puff soufflé style. Ready!!!

FYI - It’s just as much fun on the grill when it’s too hot to turn that oven on.
