Red and Orange Roasted Beet Salad
This iron rich salad is good as a side salad or honestly an appetizer with a complimenting Malbec!!
The citrus and mint perfectly compliment the EVO’d , salted and peppered roasted beets. This is one of my go to’s.
4 medium sized washed beets
2 oranges
1/2 tsp orange zest
juice of 1 orange
1 tsp lemon juice
1 generous handful thinly sliced fresh mint
1/2 tsp coriander
1 tbs EVO (extra virgin olive oil)
salt to taste
pepper to taste
Set to Bake 400 degrees
Toss beets in EVO, salt and pepper. Wrap in foil either individually or together. Place on cookie sheet for 40 min or until the beets are tender.
Combine in a bowl , zest, orange and lemon juice, EVO, salt ,pepper, coriander and thinly sliced mint. Pinwheel oranges
Allow beets to cool,remove skin easly with fingers and pinwheel the beets.
Gently combine pinwhelled beets and oranges in bowl with marinade.
Refrigerate for at least 30min.
